Mung beans are round green beans that are especially used in the Asian kitchen. The beans are both used in savory as well as sweet dishes. Many dishes use a paste of cooked mung beans as basis for their meal. In some regions of India, the beans are used together with ginger and salt as ingredient for pancakes. In Hong Kong, they are often used to make ice creams. Just like with other beans, mung beans are rich in fibers and proteins. In fact, they are good source of vegetarian and vegan plant based protein. Besides that, they are an excellent source of all kinds of essential minerals, like copper, manganese and magnesium.
