Koban is a gluten free Japanese rice cracker in the original round form, that is flavoured with tamari soy sauce (soy beans, water, salt), mirin rice wine (water, glutinous rice, rice, salt) and seaweed. These crackers are originally from Japan. They are made from glutinous rice flour with various flavors. It is called glutinous in the sense of being glue-like or sticky, and not in the sense of containing gluten (which it does not). They are steamed, cut into the right shape, dried and grilled. Mirin is a sweet, Japanese rice wine that has 40 to 50% sugar and less than 1% alcohol. It has a mild, sweet taste. Seaweed contains a lot of minerals and also fructose (glyconutrient), a special kind of sugar uncommon in many foods, which has a beneficial effect on the intestines. Sesame seed contains a lot of fibre, protein, B-vitamins, minerals and strong antioxidants. Shin mix is light and savoury. It is perfect with a drink or as snack.
