Calypso Pilaff*

Calypso Pilaff is a healthy mix of brown basmati rice, green and dupuy lentils and finally yellow split peas. You can simply make a delicious, nutritious meal with this healthy mix. Pilaff (or pilav) comes originally from the Middle-East. We use brown basmati rice, originally from Southeast-Asia in this mix. The rice has a long, solid grain and a full taste. The word "basmati" originates from Hindi language and it means "fragrant". Because of the rice bran it contains nutritional fibre, vitamin B1, vitamin B3 and iron. Lentils are pulses that are rich in protein, fibre and are also an excellent source of iron. The red variety has a sweet, nutty taste and boils down to a thick, creamy red-orange mash. Green lentils have a strong, characteristic taste. These lentils have the longest cooking time, but remain solid. Dupuy lentils originate from the region at Le-Puy and Velay in the Auvergne and are also known as the "Rolls Royce" among the lentils. Dupuy lentils are dark-green, pretty small, and have a little stronger bite and a nutty taste. Split peas have little fat and contain good amount of fibre and protein. They are also rich in vitamin B11, manganese, copper and iron. The yellow split pea is a bit sweeter in taste than the green variety.
