Buck wheat can be recognized by the triangle shape of the seeds. This raw buck wheat is unroasted and has light brown, green seeds. It is also called a pseudo grain, because the buck wheat is not a grass. It is often used in the same way as grains. Buck wheat is rich of fibers and proteins and also a good source of the minerals magnesium, copper, and the vitamines niacin (B3) and riboflavin (B2). You can use buck wheat for breakfast porridge for instance, or all kinds of pastries.
